It’s still officially made content, regardless of the original creator’s involvement or not, so it’s still technically canon. While some people may not like the later seasons, it doesn’t mean they are no longer canon to the overall show. It simply means that those people don’t like them.
With issues of broken lore or worldbuilding it can be skewed as to what is considered canon (which I stated before that there are exceptions) in that case you could ask the original creator or the current leads/creators as to what it should be and make your decision then.
I don’t care for several things the later seasons did with the characters or world myself… but I don’t try to discredit them as false and freak out about them like many people seem to. I just watch them and like or dislike them on my own. They are still canon, but they might not be things I like still.
Overall though, if you don’t like it, then don’t. No need to make a big deal out of it.

So if Hasbro got a bunch of crackheads to produce another season of FIM without any of the original staff, would that be canon too because it has Hasbro’s blessing? The reason lots of fans don’t consider seasons of FIM canon is because they were made after Lauren Faust, especially, and others of the original staff stopped having creative input on the show. Combined with the fact that said seasons broke the rules the first two seasons established, derailed characters and worldbuilding and had forgotten what the show used to stand for. In other words, later seasons broke fans’ suspension of disbelief.
Canonicity is not dependent of a publisher’s blessing, it’s dependent on whether the original creator(s) was involved. It’s fair to say that everything starting with “A Canterlot Wedding” is of a different canon than the episodes that came before it, because that was when Lauren Faust stopped having creative involvement entirely.
Generally it’s something that has been officially proven, either visually or verbally by those who make the content. Something officially made (such as episodes of MLP) is completely canon with only very few exceptions, but those are usually stated if that’s the case.
