Probably because although she got a lot better at doing what she wanted after the Friendship Games, she’s still continuously a huge doormat throughout the series and never really sticks up for herself. She only ever gets angry when people keep pushing her or when her friends are being threatened in some way. In Spring Breakdown, she blew up at Rainbow Dash because she realized her friends’ vacation was being ruined and she wanted everything to go perfectly for them.
Twilight (in MLP and EG) is afraid of letting her friends down. MLP Twilight sees herself as a beacon of strength and always strives to be the greatest role model and friend that she can be because she knows how many people look up to her. EG Twilight, on the other hand, thinks that all of her friends already look down on her, and she always tries to please them because she’s worried that they won’t like her if she doesn’t. This is talked about a bit too briefly in Twilight’s Sparkly Sleepover Surprise. She feels inferior to MLP Twilight and wants to show her friends that she can be just as perfect as her, so she always tries to make sure they’re happy with her. Watch some of the shorts where someone gets upset around her because it’s pretty sad when the poor girl freaks out.
I think the main reason she almost never gets angry is that she’s afraid she’ll really upset someone, specifically one of her friends. It would have been nice for one of the movies or books to actually address her inferiority complex when it comes to Princess Twilight, but I guess that issue will always go unresolved.
