“Sol” is a masculine noun in Latin, so the adjective must agree: → “Invictus”
Even if the character or concept of the sun is female (like Princess Celestia), traditional Latin does not change the adjective to match the metaphorical gender.
Invicta sounds right to modern ears but its wrong for latin.

I considered this carefully. She is white of course as the day is, and red as she does get angry and is willing to cooperate with chaos and use her student and her friends as unpredictable resources. Yet she is a mistress of knowledge and learning and is this blue. But she is nurturing like a mother, and thus green. But as we see when she teaches twilight dark magic, she has the capacity and mastery if darkness as well. So all colors.
