Jeez, I’m not a furry(a lot of the snouts don’t do anything for me), but I don’t hate any of them, nor am I fazed by the art(you get used to it while browsing e621 for pony, pokemon, monster girls… and kirby).
I’d use anthro, but “anthropomorphic” is so much less clear than people think, because there’s a serious arrogance inherent in a lot of it. like… can we really say language is an exclusively human trait? sure only humans really have language, but why would we think of an alien creature that also had it to be just a derivative of our own species? maybe we’re both derivatives of something else!
the social inertia is just gung ho for making “furry” define something that doesn’t even always have fur. so I make fun of that sometimes. but personally I like to call them bipeds and quadrupeds. or hooved and handy. because that’s really the big difference, as you said.
Because early FiM fandom emerged from a population that mostly did not think of themselves as furries, did not feel any more drawn to that social group after becoming fans of the show, and therefore denied any attempts to identify them as furries, for various reasons.
If you mean in the more literal sense of ‘how could ponies not count as furry’, then because they aren’t physically anthropomorphized in the usual way–no hands, no bipedalism, etc.
honest answer: because the furry fandom has historically been too inclusive, allowing for bizarre fetishists to prey upon the pressure furries put on each other to accept all without judgement, and people don’t want that as characteristic of the mlp fandom. but beyond the sociopolitical ramifications, ponies walk on four legs. furries walk on two.

The furry community combine persecution complex, very high potential for cringy/disguting/stupid stuff, no common sense when it come to “hide your powerlevel”, and high tendency to take itself way too seriously. This isn’t a good combination to be appreciated.
Pretty much every fandom will look down on them, even pastel horses fuckers.
