Simple, the fantasy in Sparkles Seven never happened. It was a fake story made up for the mission, thus the imaginative ‘flashback’ doesn’t need to tie into the timeline

Except there are now three different episodes, two of which are from the same season, either mentioning or showing Applebloom being around when AJ was just a little filly.
 
And assuming AJ exaggerated about her country music stick, why would she lie about Applebloom?

Technically, we don’t know if the Apple Chord story is true so we can’t really use it as evidence for anything
So… 5yo Sweetie Belle suddenly equals Baby Apple Bloom?
