Possible headcanon occurs to me: She won all those hats in apple bobbing contests, winning every one of them.
Some one needs to make a Planet of the Apes reference to how “They ruined it all. Those dirty, filthy writers! You ruined it all!” or something.

I prefer my headcanon: Applejack has a wardrobe full of identical hats, and she’s even got them labelled for each day of the week.
