Certainly there’s little to go on with characterization in this show and that’s why we go with what we can. Maybe Trixie isn’t into them a whole lot or maybe she loves peanut butter crackers all over. Either way it’s entertaining somehow.

All good questions, all good questions. Although there are no hints that pony Trixie likes them, so I assume only human Trixie eats them, likely because, as many people do, she thinks they taste good, however, I wouldn’t know I’m allergic.
One wonders why Trixie likes peanut butter crackers. What memories, if any, does she enjoy when eating them? Is she eating them for nutritional benefit? (Perhaps not, there are things with more nutrition in them then that.) And why is she born a unicorn, too?
